About this Event

The Preview Dinner for the Wine Festival at St. Ambrose University is an elegant evening offering guests a gourmet dining experience paired with fine wines. Attendees enjoy a four-course meal expertly paired with wines from our featured vintner while participating in live and silent auctions to support student scholarships. It's a sophisticated night of food, wine, and community.

Menu:

  • Appetizers and Wine: Crab ceviche spring-roll cannelloni, pork & rhubarb croquette with rhubarb mostarda, and mini potato & caramelized onion hand pie served with a 2024 Two Tuxedos Sauvignon Blanc and a 2023 Margarett's Vineyard Merlot
  • Salad and Wine: Compressed pear and roasted beet salad paired with a 2024 Two Tuxedos Sauvignon Blanc
  • Seafood Entrée and Wine: Butterfly pea cured salmon crudo paired with a 2020 Seabiscuit Ranch Chardonnay
  • Meat Entrée and Wine: Beef tenderloin ramp and potato mousseline and merril jus paired with a 2022 Domaine Cabernet Sauvignon. Vegetarian Option: Carrot 'Osso Buco' with polenta bianca, gremolata, and carrot jus paired with a 2020 Seabiscuit Ranch Chardonnay
  • Dessert and Wine: Lemon ginger mousse as a palate cleanser and a chocolate torte with a sesame brittle paired with a 2023 Miro Petite Sirah
